Appearance: A lovely colour of pale gold and a fine mousse; a cuvee that brilliantly comnbines slowly rising bubbles with a persistant string of pearls.
Aroma: The freshness of the cuvee Nicolas Francois Billecart develops all its aromatic complexity - aromas of white flowers mixed with subtle notes of brioche.
Palate: The balance between richness and persistence is the hallmark of this accomplished wine. The perfect blend of grands crus from which it is made gives it a lovely freshness on the palate, developing a wide range of aromas.
Serving: Served at cellar temperature (10 degrees), this vintage will enhance the flavour of poultry or white meat.

The 2000 Brut Cuvee Nicolas Francois Billecart is a big, exuberant wine that explodes from the glass with layers of fruit. French oak has given the wine an additional measure of volume and richness, but without dominating the wine’s overall balance. Pretty notes of spiciness and minerality add finesse on the close. The Cuvee Nicolas Francois Billecart is 60% Pinot Noir (Mareuil-sur-Ay, Ay, Ambonnay, Verzenay, Mailly) and 40% Chardonnay (Cote des Blancs). In 2000 the wine was aged in barrel (20%) and saw batonnage, although it did not undergo malolactic fermentation. This is Lot: L 505955 25709J. Anticipated maturity: 2012-2022.

Screw Cap
Wines sealed with a screw cap as opposed to a cork, which experts report protects and preserves wine more effectively than does a cork, while also eliminating the possibility of cork taint.
No Sulfites
All wines naturally contain some sulfites, however wines that contain less than 10 parts per million sulfites are not required to include "Contains Sulfites" on their labels.
